Chocolate Fig Fudge – Vegan and Raw

My third Raw & Vegan experiment using dried figs, cashew butter, coconut butter, cacao power and vanilla powder. This tastes great and does not do harm to your body. No sugar added, not-baked.

Figs helps lower high blood pressure, a good source of dietary fiber to lower cholesterol and aid in weight loss. The study showed that the fruit and cereal fiber in figs reduce the postmenopausal breast cancer. Figs also provide protection against macular degeneration. However, it is good to note that figs are among a small number of foods that contain measurable amounts of oxalates, naturally-occuring substances found in plants, animals and human beings. When oxalates become too concentrated in body fluids, they can crystallise and cause health problem. For this reason, individulas with already exisiting and untreated kidney or gallbladder problems may want to avoid eating figs. Oxalates may also interfere with absorption of calcium from the body.

Cashews have a lower fat content than most other nuts, approximately 82% of their fat is unsaturated fatty acids, and about 66% of this unsaturated fatty acids content are hearth-healthy monounsaturated fats, similar to those found in olive oil. This fat can help to reduce high triglyceride levels in diabetic patients. Nuts in general lower your risk of cardiovascular and coronary heart disease. The copper in cashews plays a role in a wide range of physiological processes including iron utilisation, elimination of free radicals, development pf bone and connective tissue, and the production of the skin and hair pigment called melanin. Magnesium in cashews helps regulate nerve and muscle tone and is also vital for healthy bones. Cashews also helps prevent gallstones, lowers risk of weight gain. Similar to figs, cashews are among a small number of foods that contain measurable amounts of oxalates and some people have allergic reactions to three nuts including cashews.

Cocoa has antidepressant effects and contains approximately 43.6mg of powerful antioxidants flavonoids per gram. Cocoa is one of the highest polyphenol-containing foods, more than red wine or tea. Drinking cocoa may help to fight cancer, heath disease and ageing through its antioxidant boosting effect. Try using raw cocoa powder, which is a minimally processed cocoa powder. Beware that most commercial cocoa powders have the antioxidant-containing flavonoids removed because they taste bitter. Cocoa may also lower LDL cholesterol, reduce the risk of blood clots, increase blood flow to the arteries, lower high blood pressure, boost cognitive performance and provide essential minerals such as calcium and potassium. However, cocoa contains caffein, which may have negative effects such as insomnia, on caffeine-sensitive individuals. It also contains oxalates.

These fudge also contains coconut.
