Kolachki are extremely versatile and among the prettiest and most colourful little cookies to ever grade your Christmas dessert platter. Their origins are claimed by several Eastern European bakers, notably the Slovaks, and Croatians. But regardless of how one spells their name, they are absolutely delicious. Kolachki can be square, diamond-shaped, or have all four corners tucked into the centre to make a cute little envelope. You can freeze a batch of unbaked, filled Kolachki for later and bake them frozen. The recipe is taken from “Polish Classic Dessert”.

Ingredients: cream cheese, unsalted french butter, organic flour, pineapple fillings, egg white, confectionary sugar.
