Made during my five-day schooling at Tsuji Institute of Patisserie in Osaka, Japan from Aug 18th – 22nd 2014.

Really love these soft caramel candy with a scent of real vanilla. The temperature is very important.

Made during my five-day schooling at Tsuji Institute of Patisserie in Osaka, Japan from Aug 18th – 22nd 2014.

What I have learnt is that the colour of sugar coating will depend on time and temperature. The white coating will give you sweater taste while the brownish colour will give you a slightly bitter sweet taste. There is no right or wrong, completely depends on your preference.

Mille-feuille

Made using Feuilletage normal with Crème Pâtissière. 

The mille-feuille is a French pastry of which the exact origin is unknown. Its modern form was influenced by improvements of Marie-Antoine Carême. Also known as the Napoleon. The top pastry layer is glazed with apricot jam, fondant and bitter chocolate couverture.

Pecan Cookies

The traditional way to prepare pecan cookies – ciastka kruche z orzechami – is by enveloping a pecan half in the fragile dough. I took a shortcut by adding ground pecans to the dough and forming it into crescent shapes. They are usually were made only at Christmas because they were time consuming and pecans are still expensive. These cookies are similar to Russian tea cakes, snowballs and Mexican weeding cookies. Partly organic. 

Pecan nuts contain vitamin E, which is the best antioxidants. It will help to subdue the blood lipids to get oxidized unnecessarily, which helps in preventing coronary heart diseases. Pecans also have cholesterol lowering properties. Research has also confirmed that pecan nuts help in weight loss by increasing the metabolic rate of the body and improves satiety. Unsaturated fat content in pecan is also the heart-healthy fat. Sixty percent of the fat content in pecans is mono unsaturated and the leftover thirty percent is polyunsaturated, which means that the saturated fat content in pecan nuts is very low. Besides, pecans contain zero trans fats. Pecan nuts contain 19+ vitamins and minerals. Vitamins from the B group, vitamin A, vitamin E, calcium, potassium, folic acid, phosphorus, zinc and magnesium are also present in pecans. Pecans also provide 10% of the total fiber. Pecans are also rich source of proteins and contain less carbohydrates and zero cholesterol. Best-suited for sodium restricted diet for heart patients and those with high blood pressure

Ingredients: unsalted french butter, organic sugar, organic vanilla extract, water, organic flour, himalayan salt, pecans, and confectionary sugar.
